Slow-Cooker BBQ Chicken Loaded Sweet Potatoes

Summer is HERE! We all love summer grillin’ recipes, especially BBQ chicken, but we don’t all have a grill, and sometimes we just don’t want to stand outside, either (ya feel me?).⠀

Luckily, this EASY slow-cooker barbecue chicken stuffed sweet potato is just as wonderful and doesn’t dry out with that beautiful layer of sauce on top. ⠀

It’s the perfect dinner, so you can have more fun outside and less time in the kitchen! ⠀



  • 1 cup bone broth⠀
  • 1 cup @primalkitchenfoods BBQ sauce
  • 1 1/2 pounds boneless chicken breasts, and/or thighs ⠀
  • 34 sweet potatoes⠀
  • chopped scallions⠀
  • chopped cilantro⠀


  • Preheat slow cooker to low and line with parchment paper.⠀
  • Place chicken in slow cooker.⠀
  • Mix bone broth and BBQ sauce together in bowl, then pour over chicken.⠀
  • Stir to coat all chicken evenly.⠀
  • Wash sweet potatoes and prick with fork.⠀
  • Place sweet potatoes around/on top of chicken.⠀
  • Cover slow-cooker with lid.⠀Set it to Low and Go!⠀
  • Cook on low for 6-8 hours, until tender.⠀
  • Remove sweet potatoes and set on platter.⠀
  • Shred chicken with fork.⠀
  • Cut sweet potatoes down the middle and spoon shredded chicken on top.⠀
  • Top with chopped scallions and cilantro. ⠀
