BBQ Chicken stuffed sweet potatoes
No oven or grill needed! We all love summer grillin’ recipes, especially BBQ chicken, but we don’t all have a grill, and sometimes we just don’t want to stand outside, either (ya feel me?).
Luckily, this EASY slow-cooker barbecue chicken stuffed sweet potato is just as wonderful and doesn’t dry out with that beautiful layer of sauce on top. It’s the perfect dinner, no matter the weather!
1 cup bone broth
1 cup Primal Kitchen BBQ sauce (or your favorite brand)
1 1/2 pounds boneless chicken breasts, and/or thighs
3-4 sweet potatoes
1.Preheat slow cooker to low and line with parchment paper.
2.Place chicken in slow cooker.
3.Mix bone broth and BBQ sauce together in bowl, then pour over chicken.
4.Stir to coat all chicken evenly.
5.Wash sweet potatoes and prick with fork.
6.Place sweet potatoes around/on top of chicken.
7.Cover slow cooker with lid.
8.Set it to Low and Go!
9.Cook on low for 6-8 hours, until tender.
10.Remove sweet potatoes and set on platter.
11.Shred chicken with fork.
12.Cut sweet potatoes down the middle and spoon shredded chicken on top.
13.Top with chopped scallions and cilantro.
