Hmm…maybe eating healthy isn’t so hard!
I grew up eating cookies (my mom was a professional baker) and I inherited her love for baking. But, when I discovered I had severe leaky gut from a bacterial and parasite infection several years ago, I thought I’d have to give up my sweet tooth forever. Thankfully, I’ve learned how to tweak some favorite recipes with gut-healthy ingredients and now get to enjoy all my childhood favs!
Swapping regular, refined wheat flour with grain-free almond flour is the base for this yummy cookie concotion. It’s gluten-free, which means you won’t feel bloated after eating.
It’s one my favorite baking staples now-a-days. It’s a a good source of vitamin E, as well as protein, dietary fiber and healthy fats. Since it is neutral in flavor, it is a great replacement for wheat and other flours in baking. Generally speaking, if you want to replace all-purpose wheat flour with almond flour, the ratio is 1:2 all-purpose flour to almond flour. So replacing one cup of all-purpose flour will generally require two cups of almond flour, but it can vary slightly from recipe to recipe.
Substituting natural date sugar for refined sugar is a healthier choice that won’t wreak havoc on your waistline. Date sugar comes in a granulated form, so you don’t have to do the hard work of grinding up a bunch of dates in your blender. Plus, dates are highly regarded in the nutrition world because they contain lots of insoluble fiber, an element necessary for promoting healthy bowel movements, as well as other vital nutrients that give health and energy.

- 2 eggs, room temperature
- ½ C date sugar
- ½ C coconut oil
- 2 cups almond flour

- ½ t sea salt
- ½-1 C dark chocolate chips
- Flaked sea salt, for topping
- Preheat oven to 350 F.
- In a large mixing bowl, whisk together eggs, date sugar and coconut oil until smooth and creamy.
- Add in almond flour, Vanilla Collagen Creamer, ground cinnamon and sea salt and whisk until well-combined.
- Fold in dark chocolate chips.
- Pour cookie batter into a 10-inch cast iron skillet.
- Bake for 20 minutes and let cool for at least 5 minutes.
- Top with flaked sea salt, if desired.
