This Bacon-Fig Chicken is riduculously EASY and so addicting!
Organic chicken thighs with figs, wrapped in lean Applegate Turkey Bacon, and dusted with Simply Organic All-Purpose seasoning will make you weak in the knees! (drooling yet?)
It’s #paleo and #whole-30 approved when you use Applegate Turkey Bacon or any other sugar-free approved bacon. We love the Applegate brand, because it’s insanely delicious, and nitrate- free! Really – we’ve been eating it for 3 years and nothing else seems to measure up – it’s amazing!
I like serving this chicken with simple roasted potatoes and roasted veggies, like broccoli or Brussels sprouts. If you’re crunched for time, you can bake a few potatoes or sweet potatoes ahead of time and simply heat them in the oven for a few minutes or cook them with the chicken in the slow-cooker like I do…And, Boom! You have a meal from start to finish in 15 minutes!
Sprinkle each piece of chicken with sea salt, black pepper, and Simply Organic All Purpose Seasoning blend. Then, wrap 1 piece of Applegate turkey bacon around each piece of chicken and secure with a toothpick.

This simple, no-fuss dinner is so delish and sure to be a crowd pleaser at your house!
Plus, it’s anti-inflammatory because it’s made with whole ingredients (you’re welcome). That means no bloat or belly pain for you!
If you prefer, cube or chunk red or sweet potatoes, and roast in the oven on your food prep day. Then, just re-heat as you roast the other veggies for a few minutes and dinner is done. Effortlessly!
I toss potatoes with olive or coconut oil and a dash of sea salt and roast on a cookie sheet at 350 degrees, until golden brown and tender. For broccoli or Brussels, toss with the oil and balsamic vinegar, and roast on a cookie sheet at 350 degrees for 10-15 minutes.
- 8 Organic boneless, skinless chicken thighs or breasts
- 1/2 cup Paul & Dawn's homemade bone broth
- 1 package of lean bacon (we used Wellshire Turkey bacon)
- Simply Organic All Purpose or Savory Herb Turkey Rub Seasoning
- 1 dried fig for each chicken thigh or breast (about 8 total)
- Spray inside of slow-cooker with coconut oil (or your preferred oil spray)
- Pour bone broth into bottom of slow cooker.
- Top each piece of chicken with 1 chopped fig.
- Sprinkle top of chicken with seasoning.
- Wrap each thigh with 1/2 or 1 full bacon slice and secure with toothpicks (depending on size of chicken pieces)
- Place thighs in bottom slow-cooker.
- Set it to Low and Go.
- Cook for 4-5 hours.
- *Optional: Make this a one-pot meal by placing whole sweet potatoes in bottom of slow cooker first.
- Then, add chicken on top and cook for 4-5 hours on low.
Optional: If you’re not following Whole 30 and want to save even more time, use 1 teaspoon of Divina fig spread on each piece of chicken instead of the whole, chopped figs.
